Apple sweet potato muffins

A healthy way to start the Thanksgiving morning. These are delicious, moist and full of goodness!

We always had the tradition of waking up Thanksgiving morning and going on a little “turkey trot”. I know, there are two types of families out there — the type that wakes up and exercises on holidays and the ones that have a luxurious breakfast paired with bloody mary’s and mimosas! Well, my family is both :)

I loved the tradition of having the Thanksgiving smells in the kitchen when you wake up, and getting dressed up to head out into the crisp November air for a long walk or a jog. We’d then get a cup of coffee at our favorite local shop (which was open every single day, even including holidays!) and head home for a Thanksgiving breakfast.

And yes, even though you have a big holiday meal coming — YOU NEED TO EAT BREAKFAST. In fact, if you omit eating in the morning, your metabolism may slow and your hormones will become out of balance so that when that cheese board goes out or when the mashed potatoes are on the table, you may even eat more than you normally would because of your hunger cues being out of whack! [Side note: it is OK to overindulge on a holiday. These are moments to just enjoy your family and loved ones, and lean into what brings you joy in that moment, GUILT FREE!]

Try and set yourself up well on Thanksgiving by thinking about Fiber, Protein, and Healthy Fats. This combo will keep you satiated, keep your hormones in check, and have you feeling GOOD heading into Turkey Day! I would pair this muffin with a hard-boiled egg or slather on some almond butter for good measure!

This recipe was inspired by getting in some fiber and protein for my little man, who is 10 months old. He approves of these and so does the rest of my family, so I’m positive this will be a hit at your breakfast table. I like making them in mini-muffin size, but you can also make normal sized muffins of or a bread. Just bake for a bit longer and use the “toothpick test” to know when they are done — when the toothpick comes out clean, it is done.

Apple Sweet Potato Muffins

2 cups rolled oats

2 small apples or 1 large apple, peeled and cored

2 small or 1 large sweet potato

2 eggs

1 tsp baking soda

1/8c to 1/4c maple syrup, depending on how sweet you like your muffins. I went for about 1/8c.

1 tsp each of ginger, cinnamon and nutmeg

  1. Preheat oven to 350 degrees.

  2. Wash sweet potatoes and poke with fork in a few places. Wet a paper towel and wrap around potatoes individually. Put them in the microwave for about 5 minutes, until their soft. Once cool, scoop out insides and remove skins.

  3. Grate apple with a cheese grater or zester.

  4. add all ingredients to a bowl and use an electric mixer to combine.

  5. Spray muffin tin (or bread tin) with an avocado oil spray (Primal Kitchen makes a good one).

  6. bake for 10-12 minutes, until toothpick comes out clean. let sit for one minute, then remove and allow to cool.

  7. Enjoy!
