Buffalo Cauliflower

My husband is a big buffalo wing fan on game day (or any day). This weekend I experimented with a buffalo cauliflower recipe — this is great, because it gets in more fiber in the form of cauliflower, but I also lightened it up without the use of butter (yes, butter is usually in buffalo wings :)).

I hope you like this one just as much as we did, it was devoured!

Recipe below:

1 head of cauliflower

salt and pepper

1 tbsp olive oil

1/4 c hot sauce

1 tbsp lemon juice

heat oven to 450 degrees. Spray baking sheet with avocado oil spray (I like primal kitchen brand). Slice cauliflower into thin, even sized pieces. Toss with salt and pepper and place into oven for 15-18 minutes, until browned.

While cauliflower is cooking, mix together olive oil, hot sauce and lemon juice.

Take cauliflower out and spoon mixture over it. With a spatula, toss cauliflower so that the mixture is evenly distributed.

Put cauliflower back in the oven for another 5-10 minutes, until crispy to your liking.

Serve immediately.
