Grain free salmon burgers

Salmon is such a powerhouse for all of us, but especially for both expecting and postpartum mamas.

Salmon is host to omega-3's and lots of healthy protein, which are the building blocks of baby’s brain development. Our bodies cannot make omega-3s on our own, so we need them from external sources. And ya know what else? These omega-3s have been shown to help fend off postpartum depression symptoms, which I know I needed all of the help I could get to move through my post-baby blues.

Salmon also gives us all of the Vitamin B-12 and Vitamin D, which we hear a lot about when we are pregnant and breastfeeding. You’ll probably notice this in your prenatal vitamins, or your doctor is asking you to take a supplement. These are two critical nutrients that many women are deficient in, but are key to a healthy nerve system and DNA development.

I would recommend putting these atop a salad or in a pita pocket. I topped mine with a dollop of fresh smashed avocado, but you could also squeeze a bit of lemon and a dollop of greek yogurt to keep them moist.

Salmon Burgers:

2 cans of wild salmon (I like wild planet brand, which is sustainable)

3 tbsp chopped dill

4 scallions, chopped

2 tbsp lemon juice

1 tbsp lemon zest

salt, pepper

red pepper flakes

Mix all ingredients together and mash down with a fork. Mold into patties with hands, so that they are flattened. Refrigerate for one hour.

Bake on a baking sheet at 375 degrees fahrenheit for 25-30 minutes, flipping after 15.

Top with lemon squeeze, avocado and a dollop of greek yogurt.
