Mango Coconut Oats

Ooooh this one is so warm and delicious, brings the tropics inside in the winter! I love anything coconut, and when you can’t do a real pina colada because of #dryjanuary, maybe this will give you your fix.

I added in some great healthy fats, in the form of chia seeds and coconut oil, which is great for healing, as well as brain development if you’re feeding this one to your little one. I love a warm bowl of oats during the winter, but this one is a bit different and gives me all of the nourishment and fuel I need to start my deal.

Oatmeal has a ton of fiber and B vitamins that are so important for so many of us - in particular, pregnant women and postpartum women on the healing and/or breastfeeding journeys. Mango is a big punch of vitamin C, which we all need these days to fight off cold and flu season!

Makes 2 servings

1 cup of oats (I like quick cooking Bob’s organice Red Mill oats)

1 tbsp coconut oil

1-2 tbsp chia seeds

1/2 cup mango, chopped

Coconut flakes (unsweetened) for topping

Make oats according to package. Usually, its 2 cups of water with 1 cup of dry oats. You can make via stovetop, but with quick cooking you can also microwave the water and oats on high for 2 minutes, then let it sit for 2 minutes.

Once oats are warm and prepared, mix in coconut oil. This will melt the coconut oil if in solid form (it usually is in the winter, but depends where you live). Once coconut oil is mixed in, sprinkle on chia seeds and mango and mix to incorporate. Top with added coconut flakes and enjoy warm!
